losing it.

Well, so far I've lost 5.4 lbs!
I am so happy!
The one thing that really ticks me off about myself, while i'm working out, is that I didn't do this sooner.
If I would have started eating healthier and exercising a year ago, I would be working off baby weight. 
Instead, I am doing it a year later and am working off an additional 10 lbs!
So frustrating!
But, you have to start somewhere, and I'm glad I finally decided now is the time.
After 4 kids, I deserve it!

Sausage Stuffed Zucchini Boats

1lb sausage
1/2 small onion, diced
Salt and pepper to taste
2 garlic cloves, minced
1 jar spaghetti sauce
1/2 cup water
4 medium sized zucchini, washed and trimmed
1 cup cheese
.
Start a large pot of water to boil. 
.
Scoop out insides of zucchini and set shells aside. 
Dice insides and set aside. 
.
Brown sausage with onion, garlic, and seasonings. 

Add desired amount of zucchini insides, 1/2 jar of spaghetti sauce and water. 
Turn on low and cook for 4-5 minutes with lid on. 
Stir occasionally. 
{I had leftover insides so I will freeze them to use in spaghetti sauce latter. Don't want to waste them!}
Once water has started boiling place zucchini shells in water and boil for 1-2 minutes. 
Spray a 9x13 baking dish with non stick cooking spray and spread remaining 1/2 of spaghetti sauce in bottom. 
Place shells in a row into the dish. 
Fill with sausage mixture. 
Top with cheese. 
Bake @ 350 degrees F. 25-30 minutes.

Awareness.



I love the app MyFitnessPall!
It makes you realize what you stuff in your face and think twice about seconds!
Today was my nieces birthday.
She got to take cookes to her class and there were left overs.
She offered me one and of course I ate it.
But if I wasn't paying attention to what I was eating, I probably would have eaten another one!
Then it was her birthday party and there was cake and ice cream cups!
How many times do we go back for seconds on stuff like that?!!
I know in the past I would hace.
Upon eating 1 serving of each, I consumed an extra 554 calories!
And it's all sugar which means it turns in to fat!
I could have had seconds on dinner, been fuller, and it would have been WAY healthier for me.
Wish I would have realized this sooner.

A Healthy Breakfast


  • 2 peeled & diced apples {smallest you can get them}
  • 1 tsp. cinnamon
  • pinch of salt
  • 2 cups old fashioned oats {not instant}
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 2 cups milk
  • 2 cups water
  • .
  • Place diced apples, cinnamon and salt at the bottom of the crock pot.
  • Sprinkle in oats, brown sugar, vanilla, milk and water.
  • **DO NOT STIR**
  • Cook on low for 3 hours. 
  • {you can also use 2 cups of steel cut oats and cook overnight 8-9 hours}
  • {you could also speed up this process by boiling apples in the water, then adding the rest of the ingredients and cooking on low on the stovetop till oats are cooked. In this case you could use quick oats. I think I'll this method next time.}



  • I like to add milk & a little brown sugar to mine before I eat it. Mmm. 

  • Mmm. Juice.

    Well, our first juicing experience went well.
    We learned its a waste to juice a banana, and its better to throw a whole fruit/veggies in, instead of cutting it up smaller. {so it doesn't throw itself out}
    Then we decided to make our juice into a smoothly because the girls really like banana's.
    I used the juice, ice cubes, a few bananas and 1-6 oz container of chobabi yogurt.
    It was REALLY good!

    Salad 4 Lunch.

    So... This is my healthy lunch. 
    I can't decide what dressing to use though! 
    I HATE low cal and fat free ones! 
    And I also don't really like vinaigrette's. 
    the only thing I can think of is using low fat cottage cheese and mixing it with ranch seasoning.
    What do you think?
    Any tips for me would be appreciated! 

    Back 2 School.

    Today was the first day of school for us here in St.. George Utah. 
    Which means the kids are NOT HOME!! 
    I don't think I could be more happy about that! 
    Did this summer seem extra long to anyone else, or was it just me?...
    After the kids left I cooked an egg for breakfast {yay me} and then settled in to a cleaning burst. 
    I did dishes, some laundry, vacuumed, and CLEANED MY ROOM!! 
    For anyone that knows me, you probably know that this almost never happens!! The hubs won't know to think! 
    I'm sure he probably won't even notice though!
